Pecan Sandies

Pecan sandies are delicious melt-in-your-mouth cookies. This recipe makes a bunch — plenty for sharing and gifting!
Ingredients
- 1 1/2 cups white sugar, divided
- 1 cup butter, softened
- 1 cup vegetable oil
- 1 cup confectioners' sugar, sifted
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 2 cups chopped pecans
Directions
Step 1: Gather all ingredients.
Step 2: Preheat Pizzello oven to 375℉ (190℃).
Step 3: Beat 1 cup white sugar, butter, oil, and confectioners' sugar together in a large bowl with an electric mixer until smooth.
Step 4: Add eggs, one at a time, beating well after each addition. Beat in vanilla extract.
Step 5: Combine flour, baking soda, cream of tartar, and salt in a medium bowl; stir into egg mixture until dough comes together. Mix in pecans.
tep 6: Place remaining 1/2 cup white sugar into a small shallow bowl. Shape dough into 1 inch balls and flatten slightly; roll in sugar to coat evenly.
Step 7: Place cookies 2 inches apart onto ungreased cookie sheets.
Step 8: Bake in the preheated oven until the edges are golden, 10 to 12 minutes. Remove cookies to wire racks to cool completely.
