Enjoy a flavorful and healthy meal that's both gluten-free and easy to prepare—all cooked together on a single baking sheet!

Ingredients:

  • 1 pound quartered potatoes
  • 4 ears ofhusked corn
  • 4 dividedtablespoons olive oil
  • 3 tablespoons Creole seasoning
  • Juice of 1 lemon
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika, divided
  • ½ teaspoon red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 1 red,  orange and yellowbell pepper, cut into 2-inch pieces
  • 1½ cups halved cherry tomatoes
  • 1 onion, cut into 2-inch pieces
  • 4 sliced sausages
  • 1 lemon, cut into wedges
  • 1 pound raw medium shrimp, peeled and deveined
  • ½ teaspoon Creole seasoning
  • Chop 2 tablespoons fresh parsley
  • Green onions, finely chopped

Instructions:

A seafood boil with shrimp, sausage, corn, potatoes, and parsley.

 

Preheat and Prepare:

Preheat your oven to 425°F (220°C).

Lightly coat a large baking sheet with cooking spray.

Cook Potatoes and Corn:

Place the quartered potatoes in a large pot, cover with salted water, and bring to a boil.

Once boiling, reduce the heat to medium-low and let them simmer until tender, about 10 to 12 minutes.

Add the husked corn to the pot and continue boiling for an additional 5 minutes.

Drain the potatoes and corn, then cut the corn into thirds.

Prepare the Seasoning Mix:

In a small bowl, combine 3 tablespoons of olive oil, 3 tablespoons of Creole seasoning, the juice of one lemon, minced garlic, Italian seasoning, ½ teaspoon of paprika, red pepper flakes, salt, and black pepper. Mix thoroughly and set aside.

Combine Vegetables and Sausage:

In a large bowl, mix the boiled potatoes, corn, red, yellow, and orange bell peppers, cherry tomatoes, onion, and sliced sausage.

Pour the seasoning mixture over the vegetables and sausage, ensuring everything is evenly coated.

Arrange on the Baking Sheet:

Spread the seasoned mixture out in a single layer on the prepared baking sheet.

Distribute the lemon wedges around the edges of the sheet.

Initial Baking:

Place the baking sheet in the preheated oven and bake for 8 minutes.

Prepare the Shrimp:

A bowl of raw shrimp on a wooden surface.

While the vegetables and sausage are baking, toss the raw shrimp with 1 tablespoon of olive oil, ½ teaspoon of paprika, and ½ teaspoon of Creole seasoning. Let it marinate briefly.

Add Shrimp and Continue Baking:

After the initial 8 minutes, remove the sheet from the oven.

Add the seasoned shrimp to the pan, mixing them into the existing ingredients.

Return the sheet to the oven and bake for an additional 6 to 8 minutes, or until the shrimp turn opaque and are fully cooked.

Garnish and Serve:

Remove the baked dish from the oven.

Take out the lemon wedges and sprinkle the dish with chopped fresh parsley and green onions.

Serve warm, enjoying the harmonious blend of flavors from the shrimp, sausage, and vegetables.
