Let's Get Cooking!
Step 1. Preheat & Prep:
- Set your oven to 350 degrees F (175 degrees C).
- Lightly grease a 13x9-inch baking dish with cooking spray.
Step 2. Brown the Beef:
- Place a large skillet over medium-high heat.
- Add the ground beef and chopped onion. Cook and stir until the beef is browned, about 5 to 7 minutes.
- Drain off any excess grease.
Step 3. Simmer the Filling:
- Stir in the tomato sauce, black beans, diced tomatoes, corn, and green chiles to the browned beef.
- Season generously with chili powder, cumin, garlic, oregano, and red pepper flakes.
- Reduce heat to low and let the mixture simmer for 5 minutes, allowing the flavors to blend.
Step 4. Layer It Up:
- Spread approximately half of the beef mixture in the bottom of your prepared baking dish.
- Arrange 3 tortillas over the beef, overlapping them slightly if needed.
- Spread another half of the beef mixture over the tortillas.
- Sprinkle 1 cup of shredded Cheddar cheese over the beef layer.
- Repeat with the remaining tortillas, beef mixture, and Cheddar cheese.
Step 5. Bake to Perfection:
- Bake in your preheated oven for about 15 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
Step 6. Cool & Enjoy:
- Let the tortilla bake cool for 5 minutes before serving. This helps the layers set and prevents burns.
