Honey-Dijon Salmon with Roasted Sweet Potatoes

Ingredients:
- 2 medium sweet potatoes(you can also use potatoes if you want)
- 5 cups broccoli
- 4 salmon fillets (5 oz each)
- 3 tbsolive oil
- 1/4 cup of Dijon mustard
- 2 tbshoney
- 2 tbseverything bagel seasoning
- 2 tbssoy sauce
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Directions
Step 1: Preheat oven to 425°F (220°C). Cover a large baking sheet with foil and give it a light coating of cooking spray.
Step 2: Cut sweet potatoes into 1/4-inch wedges. Toss with 2 teaspoons olive oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Arrange on half of the baking sheet and roast for 5 minutes.
Step 3: Meanwhile, prepare the glaze by mixing Dijon mustard, honey, and cayenne pepper in a small bowl.
Step 4: Mix the broccoli with the remaining oil, salt, and pepper.
Step 5: Remove the sheet from the oven. Place salmon on the other half. Brush each fillet with 2 teaspoons of the mustard mixture and sprinkle with bagel seasoning. Add broccoli to the sweet potatoes.
Step 6: Bake for about 12 minutes, until salmon flakes easily and vegetables are golden.
Step 7: Blend the soy sauce into the leftover mustard mixture and drizzle it over the vegetables just before serving.
