  • 1 teaspoon vegetable oil
  • 1 teaspoon fine sea salt
  • 8 dried figs
  • 1 medium red onion, thinly sliced into rings
  • 1 tablespoon extra virgin olive oil, plus more for drizzling
  • A pinch of sea salt
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon fennel seeds, slightly crushed
  • 4 ounces creamy goat cheese, crumbled
  • Additional olive oil for brushing

Step 1: Prepare the Dough: Begin by pouring the lukewarm water into a large mixing bowl. Sprinkle the active dry yeast evenly over the surface of the water. Allow it to sit undisturbed for about 5 minutes, or until the yeast has dissolved and is frothy. This process activates the yeast, ensuring your dough will rise properly.

Step 2: Mix the Ingredients: Once the yeast is ready, add the vegetable oil and sea salt to the bowl. Gradually incorporate the all-purpose flour, mixing until a shaggy dough forms. When the dough becomes too stiff to stir with a spoon, transfer it to a well-floured surface.

Step 3: Knead the Dough: Knead the dough by folding it over itself and pushing it down with the heel of your hand. Continue this process for about 5 minutes, or until the dough is smooth and elastic. Form the kneaded dough into a ball and place it in a bowl that has been lightly oiled. Cover the bowl with a clean kitchen towel for approximately 45 minutes, or until it has doubled in size.

Step 4: Prepare the Figs: While the dough is rising, place the dried figs in a small bowl and pour boiling water over them. Allow the figs to soak for about 10 minutes to soften, then drain and chop them into small pieces. Set aside for later use.

Step 5: Cook the Onions: In a skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Add the thinly sliced red onions and sauté them, stirring occasionally, until they become wilted and translucent.

Stir in the chopped figs, dried thyme, and crushed fennel seeds, then remove the skillet from heat.

Step 6: Preheat the Oven: Preheat Pizzello oven to 450°F (220°C).
