Chicken fajita pizza is a delicious fusion dish that combines the bold flavors of Mexican fajitas with the classic comfort of pizza. This recipe takes the best elements from both cuisines to create a unique and satisfying meal.

Ingredients:

Chicken Fajita Filling:

2 tbsp vegetable oil

1 sliced onion ( choose a large one)

1 sliced yellow bell pepper and green bell pepper

1 lb boneless, skinless chicken breasts which should be cut into 1-inch pieces

4 minced cloves garlic

Spice Blend:  

 1 ½ tsp chili powder

 1 tsp onion powder

 1 tsp garlic powder

 1 tsp dried oregano

 1 tsp paprika

 1 tsp salt

 1 tsp ground black pepper

 1 tsp all-purpose flour

 1 ½ tsp chili powder

 ½ tsp ground coriander

 ¼ tsp ground cumin

(For convenience, you can substitute the individual spices with a pre-made fajita seasoning mix.)

Others:    

¾ cup water

1sliced large tomato 

8 oz shredded pepper Jack cheese

1 sliced avocado

1 lime which should be cut into wedges

Preparation and Cooking Instructions

Step 1: Begin by preheating your oven to 425°F (220°C). Prepare two large baking sheets with lightly greasing

Step 2: Spray the vegetable oil in spacious skillet, heat it over medium heat. Then add diced onions and bell peppers (both yellow and green). Cook until the onions become translucent, which typically takes about 5 minutes.

Next, introduce the chicken to the skillet and cook for 7-10 minutes, stirring occasionally, until it's slightly browned. Finally, add minced garlic and cook for an additional minute. 

Step 3: Mix the spices including chili powder, onion powder, garlic powder, oregano, paprika, salt, pepper, flour, coriander, and cumin in a bowl. Remember to do it thoroughly and then add them to the skillet.

Cook this mixture for 1-2 minutes before adding water. Stir and continue cooking until the mixture thickens, which should take about 5 minutes.

Step 4: Place your pizza crusts on the greased baking sheets. Evenly distribute the chicken mixture between the two crusts.

Top each pizza with sliced tomatoes and shredded pepper Jack cheese. Bake in the preheated oven for 15-20 minutes, or until the cheese has melted and the crust edges are lightly browned.

Step 5: Just before serving, garnish the pizzas with sliced avocado and a squeeze of fresh lime juice for added flavor.
